What is the difference between biltong and jerky?

Jerky is cooked, usually smoked or dried with heat. Biltong is cured with vinegar, salt and spices and then air-dried, never cooked. Air-drying removes water rather than protein, which is why our biltong carries around 55g of protein per 100g and stays tender instead of tough.
